Grilled Fresh Pork Chops with Mango Tequila Sauce

1 1/2lbs. Smithfield® Prime Boneless Center Cut Pork Loin, cut into 6 slices
1/4 cup chopped sweet yellow onions
1/2 tablespoon olive oil
1/3 cup chopped yellow bell pepper
1 tablespoon sugar
1/2 (1 lb. 8-oz.) jar mango packed in extra light syrup, drained
1 tablespoon tequila
1 tablespoon key lime juice, divided
1 large jalapeño, seeded and finely minced
1 tablespoon fresh cilantro, minced
Salt to taste
1. To make Mango Tequila Sauce, sauté onions in hot olive oil over medium heat until tender and slightly browned on the edges. Add bell pepper and sauté until heated through. Stir in sugar until dissolved; remove from heat. Combine mangoes, tequila, 1/2 tablespoon lime juice, and onion mixture in blender. Purée in blender until smooth.
2. Combine minced jalapeño, cilantro and remaining 1/2 tablespoon key lime juice in small bowl. Let stand until ready to serve.
3. Heat charcoal or gas grill to medium-high. Grill pork chops 5 to 7 minutes per side until internal temperature reaches 145°F. to 160°F. Let stand 3 minutes before serving.
4. Serve pork chops topped with Mango Tequila Sauce and garnish with minced jalapeño mixture.
